Established in October 1991 by Dr. Sidney L. Wallace in honor of his son, James Bruce Wallace, who died while he was a student at Florida International University 's School of Hospitality Management and who was an employee of Ruby Tuesday.

To provide scholarships to FIU Hospitality Management students with an interest in food and beverage management.
